Shellfish behaviour • The queen conch is a national symbol of the Turks and Caicos Islands, deeply intertwined as it is with local culture and cuisine. The large marine snail is served up in a variety of ways, including as fritters, in a salad and cracked conch (tenderised and deep fried). They can live up to 30 years and reach up to 12 inches in length, and help preserve the region's coral reefs by grazing on algae that can smother them.
